What a day!

Yesterday my sweet nephew Tyler was taken to the ER and had to have surgery this morning to have his gall bladder removed.  My family has big issues with the gall bladder.  My mother and all of my brothers have had theirs removed as well as several of my cousins.  Tylers surgery was a success and they were able to do it by laser.  He had a stone the size of a marble.  The Dr. said he may get to come home this afternoon.  We love you Te-ty!

Yesterday Justin, Tucker and I went and picked up this beauty...

We are glad to have the new one finally!

Last night after we got home, Tucker decided he didn't want to sleep and proceeded to scream most of the night.  We aren't sure what was going on with him and we tried everything we could think of.  I finally got him to stay asleep after riding him around for about an hour.  I went to bed at 3 and he woke back up at 5.  To say that I am exhausted today would be one major under statement!  He is napping away now though and I'm trying to get some laundry done. 

This afternoon we are having an Easter Egg hunt and a hamburger supper at church.  This will be Tucker's first egg hunt and we are super excited!

Finally Friday!

Happy Friday y'all!

I had my eyes checked yesterday... 20/20 vision but a little far sighted. I got a Rx for some reading glasses to replace my old ones and I picked out super cute frames.  Can't wait for them to come in!

After my eye exam, I picked up my preciously cute prego sister-in-law and we went on a little shopping trip.  I had to go pick up my adorable bridesmaid dress for a sweet friends wedding.  Can't wait til the wedding so I can show y'all lots of pics.  Less than a month away!

Last night was my nephew Zack's Junior Prom.  He is so good looking... yes I am biased but seriously he is as cute as a bug in a rug!  He also was voted as Prom Prince by his peers.  I'm so thankful that he is a good Christian boy and he loves his family (well he loves to aggrivate me lol).  Here are a couple of pictures.




Today I'm hanging out with my little guy.  Too bad his daddy had to work today. Maybe we'll go do a little more shopping later.

I'm loving that today is my Friday!  Yep, yep I'm taking off work tomorrow to go have my eyes checked.  It's been about 7 or so years since I last had this done, so I think it's way past due.

I'm loving that Sunday is Easter.  I can't wait to see Tucker in his cute outfit!

{FOUR}

I'm loving that we are visiting the New Albany church of Christ tonight for their Gospel Meeting.  Looking forward to this.

TGIF!

TGIF Y'all! 

 My Friday started out as a stormy one, but I think that has all passed and it should be a gorgeous weekend!  

I am totally thankful that it's Friday AND Payday!!!  Can it get any better than that?

I know I've already blogged about what we're getting into this weekend (see here) so I won't bore you with those details again, but I am super excited about tomorrow!!

So, have you heard of "Engagement Chicken?"  I heard about this a few years ago and thought that it sounded interesting.  If your not familiar with it, then here is a little something I saw about it on the Yahoo! homepage.


First comes chicken, then comes marriage? Be skeptical if you must, but this recipe may be charmed. It all began 26 years ago, when then-Glamour fashion editor Kim Bonnell gave the recipe to her assistant, Kathy Suder, who made the chicken for her boyfriend, who, a month later, asked her to marry him. “It’s a meal your wife would make. It got me thinking,” says Jon Suder, who now has three children with Kathy. Details of the simple dish passed from assistant to assistant like a culinary chain letter. When Bonnell heard that her recipe had inspired three weddings, she dubbed it Engagement Chicken. Now it is linked to 72 marriages. Try the recipe, give it to a friend—oh, and let us know when it works!

Engagement Chicken
Serves 2 to 4
Ingredients:
  • 1 whole chicken (approximately 4 pounds)
  • 1/2 cup fresh lemon juice, plus 3 whole lemons—including 1 sliced for garnish
  • 1 tablespoon kosher or coarse sea salt
  • 1/2 teaspoon freshly ground pepper
  • Fresh herbs for garnish (4 rosemary sprigs, 4 sage sprigs, 8 thyme sprigs, and 1 bunch fl at-leaf parsley)
1. Position an oven rack in the upper third of the oven and preheat the oven to 400°F. Remove the giblets from the chicken, wash the chicken inside and out with cold water, then let the chicken drain, cavity down, in a colander for 2 minutes.
2. Pat the chicken dry with paper towels. Place the chicken breast-side down in a medium roasting pan fi tted with a rack and pour the lemon juice all over the chicken, both inside and out. Season the chicken all over with salt and pepper inside and out.
3. Prick 2 whole lemons three times each in three different places with a fork and place them deep inside the cavity. Chicken cavity size may vary, so if one lemon is partly sticking out, that’s fine. (Tip: If the lemons are stiff, roll them on the countertop with your palm before pricking to get the juices flowing.)
4. Put the chicken in the oven, lower the oven temperature to 350°F, and roast, uncovered, for 15 minutes.
5. Remove the roasting pan from the oven. Using tongs or two wooden spoons, turn the chicken breast- side up. Insert a meat thermometer in the thigh, and return the chicken to the oven and roast for about 1 hour to 1 hour and 15 minutes or until the meat thermometer reads 180°F and the juices run clear when the thigh is pricked with a fork. Continue roasting if necessary. Keep in mind that cooking times in different ovens vary; roasting a chicken at 350°F takes approximately 18-20 minutes per pound, plus an additional 15 minutes.
6. Let the chicken rest for 10 minutes before carving. And here’s the secret: Pour the juices from the roasting pan on top of the sliced chicken— this is the “marry me juice.” Garnish with fresh herbs and lemon slices.

It's Friday Y'all!!!

It's Friday Y'all!  I'm sure you've figured this out already, but I am super excited for the weekend!  This week has been extremely LONG!!!  FYI: this post will be very random so please excuse! 

Today is the start of the 74th annual Pilgrimage.  I was supposed to help out at one of the lovely homes, but I have something else planned for the weekend so I'm not going to get to.  I do plan on hitting up the arts and crafts fair that will be on the historic square lawn this afternoon!  I'll try and take some pics!

Tomorrow is this handsome guys birthday...


Happy 17th Zack!  We love you extremely much... even if you do aggravate the crap out of me!

Next weekend I'll be here...



hopefully, unless the hubs has to work.  I just love Spring Bowl!  It gets me so excited about the upcoming football season!!

I bought this little cutie yesterday...


I'm trying to drink more water at work and I thought this might motivate me a little bit. I really need to lose 15 10 lbs. I'm trying to follow Weight Watchers (the old WW not the new Points Plus) but I only get like 20 points and I don't think that's enough, but we'll see.

I found this fabulous blog Confessions of a 20 Something and spent the better part of two days reading all her posts.  If you haven't already found her, you totally need to check it out.  She is way too precious and totally cracks me up!  I guess I'll be living vicariously through her, because my life is just too boring for words ;)!
